Evolve Spirits Bar is located on Hobarts historic waterfront, in the Mac 01 hotel overlooking the constitution dock. Circa morris-nunn helped promote the expectation of high quality in the materiality and fine details by designing and the location of the buildings being apart of the Mac 01 holds this significance. This space holds a collection of museum-grade fossils that have been integrated into an environment that promotes the discovery that palaeontologists and collectors share within a bar. This space is designed with various spaces that are connected to create a compelling narrative throughout the space. The fossils have been showcased throughout the building in timber cabinets and this creates the story that they have been unearthed turning them into a fossil rich bone-bed. Mild steel details throughout the bar space are reminiscent of the craft of the cooper as are the smoky tones of the timber internal.
