Peacock and Jones

The peacock and jones restaurant connects to the local history in many ways through the architectural context and detailed features, designed by circa Morris-Nunn. This restaurant reintroduces fine dining back to Hobarts waterfront located within the original sandstone warehouse. The original architectural features showcase the colonial history with the mixture of local clay, sand and lime-rich seashells between the sandstone blocks have been locally sourced from digging on site. The marks and chips on the sandstone work which were made by the hammers and chisels of convicts, who cut and shaped the rock into the building blocks. The restaurant aims to be centered around Tasmanian produce, immersing the visitors in Tasmanian history which is achieved through the exterior building fabric and the industrial machinery in the building, highlighting the existing building's function, once being the IXL jam factory.
